First thanks for all your help thus far. Things are coming along! 🙂
Okay, for some reason a couple things are not happening with User Activity:
1. At the bottom of the website there is a section where Site Wide Activity is supposed to display. However, it does not update or populate activity. See attached photo.
2. One when User comments on another Users post or activity, the comment does not get displayed, even though it is recorded in the activity of the User that made the comment.
Is there a setting, or am I missing something?

Hello, could you try deactivating some plugins and testing again? it could be a conflict.
