Hello, in regards to working with Blog posts and adding in meta tags to the page header on newly created posts, is that accessible and if so where can I access this? Meaning for the individual posts rather than say the main template for blogs?

Did you had assigned the blog page from wp-admin -> settings -> reading -> blog page ? if not do it.

yes that step was done from initial setup, I remember but I double checked.I was referring to posts/theblogs created, example when clicking into ‘continue reading’:

You have latest theme update applied on the website right ? if no do it and then let me know.
If you switch off the child theme by activating the parent theme they are displayed?Cheers
