Where do I change the text for the testimonials? Thank you!

Hi,
You can change your testimonial very easily. You can find the setting for changing or adding new testimonial on the left side of the admin panel. I have added two screenshots below. Please see the screenshots then everything will be as easy as water. However, if you still have problem, please ask me again. I will try to help you.:) Thanks.
