I have a 3 level paid membership with PMP and Paypal Express as my Payment gateway.

1- How can I additional fields at the membership check out to collect information like shipping address

2- My default registration page is BuddyPress and it is not activated, how can I activate it?

Hello, for the fields check https://wordpress.org/support/topic/adding-custom-fields-to-paid-membership-pro-1
To activate buddypress as registration method go to Settings > Buddypress > Pages and make sure activate and register pages are selected, if you do not have them, create them
