For sure I’m looking over it, but I simply cannot find the way to change how Related Articles (related posts) at bottom of the single posts are displayed, in a carousel, or grid… Can you help me out?

You’re not overlooking it. Its only carousel. If you’d like the option, you can request it in the feature request sticky.

If not an option, then why you are using different styles for Related Articles on your Kleo blog posts:

– 2-column: http://seventhqueen.com/themes/kleo/uncategorized/interior-design/

– 3-column: http://seventhqueen.com/themes/kleo/courses/communication-information/

– Caroussel: http://seventhqueen.com/themes/kleo/thoughts/my-daily-blog-entry-2/

I wish to showcase a 2-column grid for related articles in my post. You have a code snippet to make it happen?

Those are all carousels. They only look like grids because there’s two and three items. The ‘carousel’ only moves when there are more than 3 items.
