Theme options not kept when deploying to UAT

Hi,

I’m having a hard time understanding why my themes options set from the admin interface are not kept when deploying to UAT. We are deploying a full copy of our dev environment (code and MySql DB) but still the footer text reverts to the default text as well as other options like layout settings and more.

Can you tell me if the options are stored in mySql or in a specific file?
