It’s up to you whether you keep the default theme, Twenty Seventeen, installed or not. It won’t affect your use of KLEO but it does help to have it installed in case you need to test if an issue is coming from KLEO or not.
If you do decide to keep themes installed, but not activated, then it’s a wise precaution to keep them updated – this is true for plugins too. If a plugin or theme has a vulnerability it can still be exploited even if it’s deactivated.
The best course of action is only have what you need installed and add any other themes or plugins only when needed.
